People who meet me for the first time do not connect food with me.
People treat me as a business man who runs restaurant business but do not regard me as a person
who actually cooks myself and even develops menus.
However, I am both a cook and an business man at the same time.
I do not want to be called cook nor business man,
Rather, I would like to be called a ‘food investigator.’ A person who aims to have interest and study food constantly,
‘Paik Jongwon’ who wishes to know more than anyone else when it comes to food.
That is me of now and that is me who I wish to become in the future as well.

HOTEL THEBORN began with a few questions I had out of curiosity:
Why does food and coffee served in hotels have to be so expensive?
Why are traditional Korean restaurants disappearing from hotels? As an answer to these questions,
I tried to include everything warm and pleasant I envision for my own food trips into HOTEL THEBORN.
From delicious breakfast that starts off your day in a great mood,
Korean food that reminds you of home, authentic Chinese cuisine cooked by master chefs,
warm coffee, and soft buns.
Most of all, the rooms, restaurant, cafe, and bakery at HOTEL THEBORN are all offered at very reasonable prices.

Even today, I continue to build and tear down dozens of restaurants in my head for the hotel,
trying to come up with what would make my customers the happiest.
I actually take great pleasure in this sort of quandary,
mulling over what food to serve or what new concepts the customers would enjoy.
As I still have a lot more to offer than the restaurants we have today,
I continue to turn to my delicious imagination as I gaze into the azure waters of Jeju.
